Lemon & rosemary coffee cake

- 2 cups all-purpose flour
- 1 1/4 cups sugar
- 3 large lemons
- 1/2 teaspoon salt
- 1/2 cup butter, cold and cubed
- 1 teaspoon baking powder
- 1 (10-oz.) jar lemon curd
- 1/2 teaspoon baking soda
- 1 large egg
- 3/4 cup buttermilk
- 1 1/2 teaspoons chopped fresh rosemary
- Powdered sugar
- Lemon wedges and rosemary sprigs for garnish
Preheat your oven to 350 degrees. Add a lining to the bottom of a 9-inch pan and lightly grease the bottom and sides. Grate lemon zest and squeeze juice from fresh cut lemon in a bowl.
In a separate bowl, mix flour, salt, and sugar in a food processor. Once it’s mixed, add butter to the bowl and blend until a coarse crumb forms. Save one cup of the crumb mixture for later.
With the remaining flour mixture, add baking powder and baking soda until blended in well. Continue to add one egg, buttermilk, and ¼ cup lemon to the bowl and blend until mixture is thorough. Stir in the fresh rosemary to the bowl and pour mixture into the prepared pan.
Next, whisk lemon curd in a smaller bowl until loose and stir into lemon zest mixture. Then, add this lemon mixture to the top of the batter in the pan. Bake for 45-50 minutes and garnish with powdered sugar, rosemary sprigs, and lemon wedges.
Pecan and brown sugar coffee cake
Nothing says fall more than pecans and brown sugar. Let these two combine to create a delicate fall coffee cake.
- 2 cups all-purpose flour
- 2 cups firmly packed light brown sugar
- 1 cup chopped pecans
- 1 cup sour cream
- 3/4 cup butter, cubed
- 1 teaspoon baking soda
- 1 large egg, lightly beaten
- 1 teaspoon ground cinnamon
- 3 tablespoons granulated sugar
In a mixing bowl, combine your flour, brown sugar, and butter to create the crumble of the cake. Add the mixture to the bottom of a greased 9-inch pan.
In another bowl, mix together one egg, sour cream, and baking soda. Then, add a part of the crumble to mixture. Continue to mix in sugar and cinnamon. Pour this mixture into the pan and sprinkle pecans and more cinnamon on the top evenly. Bake at 350 degrees for 25 to 30 minutes.

- 1 ½ cup of all-purpose flour

- 1/2 cup butter, softened
- 2 teaspoons vanilla extract

For the streusel topping, mix together flour, brown and granulated sugar, melted butter, salt, and cinnamon until the mixture forms a crumble.
In a heated skillet, saute apples and butter until softened and remove from heat. Allow the apples to cool for 30 minutes. While the apples cool, mix baking powder, flour, and salt in a mixing bowl.
In a different bowl, beat butter until creamy and gently add sugar and eggs to it. Combine both the flour mixture with the butter mix and stir in vanilla at the end. Pour mixture into the pan and top with sauteed apples. Bake at 350 degrees for 45 minutes.
